They still flavour it with traditional " siyau sok yau" or meat oils and black soy sauce. It takes not much away from the “Apollo” oven roasted duck (has a nice, soft enough bite and is very roasty with fragrant skin intact) , cha siu ( just well roasted with some burnt ends), and roast pork (ooh, that crackling and the juicy belly pork). They moved to this industrial canteen in 2024 and still do it the way old palates like them.
