They sell fish ball noodles by day but come nightfall, this whole hawker centre which offers mostly breakfast and lunch goodies, goes silent except for them. Almost every table in the centre is filled with customers quietly awaiting their old school charcoal pot of fish head steamboat order (the wait can be 1 hour!). Patience blesses the patient, with a simmering, beat up and seasoned pot of fish head or slices soup (various types of fish, from pomfret, garoupa to snapper). The soup has a clear and cogent flavour of tee po (roasted flat fish bones) and hints of prunes and an earthy aroma from the yam pieces. Have it with the side order of soy braised eggs, stewed trotters, preserved mui choy vegetable and a hearty bowl of rice.
