“Pao Fan” or exploding rice porridge, is a Cantonese dish that’s getting a
new breed of fans in Singapore. Many hawkers here are now offering it in
their menu. It’s essentially rice in broth topped with crispy fried grains. This
recipe goes one up – by using chicken rice and prawn stock.
