Don’t ask us what the LV stands for as this humble stall sits in the middle of this heartland hawker centre. The lady boss hawker, if you notice and compare, adopts a very different approach in the way she fries up her carrot cakes (both savoury white and sweet black style). She will sear and season her cakes like how they all do, over the pan, but, pours the beaten egg over very gingerly, unlike others that scramble it in. She is careful not to break up the canopy of eggs over the roasty cakes (white version) and she lets it sit for a bit. She does not chop and stir up the eggs and cakes. Her version comes with that layer of omelette atop, with some coating the cakes. You feel the egg and the carrot cakes with each bite. When she is not overly busy, order the yuan-yang or black and white version to get a sensation of both. Otherwise, go for the all-time favourite black version.

This is a one-person show and she is very diligent, hardly smiles, and is meticulous in her methods. There’s a short and constant line as she makes them in double-quick time. The magic is her kway or own-made turnip cakes. The white version is made just with a splash of fish sauce and a blast of stock. It is soft and wobbly and each carrot cake is a flavourful chicken stock-infused pleasure to the bite. The eggs, roastiness of the cakes, and the shot of fish sauce play second fiddle to the equation. This hawker is one-minded about her menu – she only offers the “white” savoury and not the “black” sweet version. When asked, she shrugs and points me to the stall front menu showing just one version.
