Outram Park Fried Kway Teow 531A Upper Cross St #02-17, Hong Lim Mkt & Food Ctr (Map) 6am – 3.30pm Sun & PH

It's crazy to think these folks will offer you a plate of this gorgeously sinful noodles at 6am, but there's already a line for their char kway teow. These Cantonese folks learnt this dish from a Teochewmaster many decades ago and never looked back. Theirs come roasty with full wok hei (wok's breath), sweetish with a clear savoury touch and the little cockles and its juices add another dimension of flavour into the dish. If these folks retire, then we would have lost a hawker legend as the new generation is not willing to take over the business.

Penang Fried Kway Teow

17 Upper Boon Keng Rd #01-08, Upper Boon Keng Mkt & Food Ctr (Map) 11am – 6pm (Or till sold out)

Mon & Tue

This septuagenarian (in her mid-70s) has been at it for over 3 decades. She is fastidious, has a little scratchy attitude but be patient and she’ll release one well fried Penang Char Kway Teow on you. She does it one plate at a time and is very diligent in her ways. She carefully spreads the noodles in the wok, so each strand gets enough wok heat. Her soy/stock sauce is very comforting, and it has “Penang” written all over it.
