Mdm Lee Kui spent a good decade roasting at the legendary Kay Lee Cantonese Roast before the latter made news for selling the recipe and business for $4 million some years ago. Mdm Lee moved here over 15 years ago, and she kept the faith. Her cha siew is rich, shiny, and well caramelised with bits of attractive charred edges. The sweetness has tones on nam yu (red fermented tofu) rose wine and maltose, among her secret marinate. Her roast pork has a thin but addictive crackling as she scrapes the thick skin as she roasts and reduces it to a thin and very moreish layer. The roast duck comes with a shiny red-brown and marvellously crispy skin (if you get em' fresh off the Apolo oven) with a bold five-spice and salt marinate that holds just enough gaminess. She also offers a range of daily double- boiled soups. She often sells out way before the stated closing hours.
