Mdm Lee Kui spent a good decade roasting at the legendary Kay Lee Cantonese Roast before the latter made news for selling the recipe and business for $4 million some years ago. Mdm Lee moved here over 15 years ago and she kept the faith. Her cha siew is rich, shiny and well caramalised with bits of attractive charred edges. The sweetness has tones of nam yu (red fermented tofu), rose wine and maltose, among her secret marinade. Her roast pork has a thin but addictive crackling skin as she scrapes the thick skin as she roasts and reduces it to a thin and very moreish layer. The roast duck comes with a shiny red- brown parchment crispy skin (if you get ‘em fresh off the "Apollo" oven) with a bold five spice and salt marinade that releases just enough gaminess. She also offers a range of daily made double-boiled soups. She often sells out way before the stated closing hours.
