From a simple hawker stall, the Roast Paradise went into a café concept in town. All their signature roasts like cha siew and belly pork (sio bak) are all intact and still done the traditional manner – in an "apollo" oven. Their platter of sio bak and cha siew comes in an Instagrammable chopping board platter and it's a must-eat there. Alongside, they also offer a wide range of comforting cze cha dishes like salted egg crispy lotus root slices and even a mala fried chicken (a tad spicy if you ask us). They also have fail-safe items like stir fried broccoli with shimeji mushrooms and wood ear fungus… over rice, which may cure a bad morning in the office.

The star item here is his roasted cha siew. Mr Ang uses a few cuts of the pork and the most sinful and most popular is his pork collar or Bu Jian Tian (parts that don’t face the sky). It is neither meat nor fat and totally mesmerising in the mouth. He glazes the cha siew with the rich caramel marinade as he roasts to keep them moist and roasty. Occasionally you'll find puo-li or mostly fat cha siew, the absolutely sinful rendition. He also has the usual cuts and there's a line for it every day. The other item is his roast pork; it comes with a cracker crispy crackling skin and moist meat under. One trick he employs is to prick the skin a few times as he roasts it in the ubiquitous (at such stalls) Apollo oven.
