Canton is the capital of Guangdong and also the food capital of China. Its dishes are Imperial class and today many chefs have taken that spirit to the restaurants. Tonny is one the most talented Cantonese chefs in Singapore. He hails from Hong Kong and had been based here over the last three decades opening a few concepts like Shunde Restaurant. His menu is out of the ordinary - from vegetables, seafood, meats, roast, grills etc. Very few would miss his mount of Crispy Shredded Yam with Truffles sauce for starters. His Crouching Tiger Hidden Dragon of dry scallops with egg whites served over a crispy flour basket, is also a hit. Decadent items include lobsters and abalone and even a Iberico salad, if you must, and there's also his rendition of humble ingredients- like a soy braised duck tongue, a salted white bait with soft braised cucumber. You will also like his crab porridge and steamed curry crab over glutinous rice. And yes, he does simple Cantonese steamed fishes too. Ask him for some off-menu creations and he may just boil some trotters in clear rich stock, chilled it and serve up a trotter’s jelly. You should try their Lemon and Wolfberry Jelly, so refreshing in so many ways.
