The authentic nasi taliwang in Lombok is like Mala spice, needlessly spicy but addictively so. The version here is calmer but does not ease up on the spice quotient. The sambal heat surfaces upon first bite and the chicken (because their turnover is high) comes freshly fried and smeared with this bold sambal. The rice is lemak or coconutty rich and refreshingly redolent with lemongrass, pandan and a gentle stock base. Even the egg is fried upon order (especially if you go at their peak hour lunch when nothing has time to sit on the shelf).
