The master with the goggles slaving over the stove, almost non-stop each hour they open for business, had been doing so for about 40 years. His eye doctor advised him in the past to give up the business as the heat was drying up his retina and affecting his sight…OR wear goggles each time he steps in the kitchen. He chose the latter. You won’t see a queue but the wait can be up to 30 minutes because they tell the customers to sit around the area and they will serve to your table (a rare act these manpower lack days) or call your order number when it's up. The beehoon and yellow wheat noodles are fried over a wood fire with a secret stock that is brewed with a heap of roasted prawn heads, bones, and garlic, among others. They fry and braise the noodles in the stock to get the maximum effect and each strand of noodle feels like they were individually marinated in that stock. The toppings of shrimp and squid rings are almost insignificant when it’s fried that well. We feel their noodles deserve more respect than being served on Styrofoam plates... go back to the good ol’ melamine or porcelain ones.
