This old school style Teochew fish soup and porridge (actually rice in fish soup) is a dying breed. They still flavour the soup with roasted pieces of tee po or sun-dried and smoked sole fish bones. The aromatics this ingredient lends to the soup is vintage Teochew. The broth comes clear and very flavourful with fresh slices of batang (mackerel), pomfret or even garoupa (when in stock). Many older regulars have that with a bowl of rice and a taucheo or miso dip, and it’s a truly comforting authentic sensation.

Yan Ji Seafood Soup

This is the stall that started this style of decadent seafood soup. The amount of expensive flat sole fish bones (or tee po) they use in the unctuous broth is amazing. The smoky fish bone aroma takes over immediately. They put in hand made minced pork ball (again, mixed with tee po mince), fish, prawns, clams and the top order can include crayfish, which is why this soup starts from $9. You just need a bowl of rice to complete this culinary delight. They now have a team of hired hands to deliver their recipe but at times it can be inconsistent.
