This is a 47-year-old, under the radar stall, and known only to the knowledgeable. There are quite a few duck noodles around but this one stands out because they mask that gamey, stink, and "fowl" taste expertly well- It's the braise sauce that contains it. We love it with the yellow noodles as the kee or subtle alkaline edge in the noodles tames the ducky-ness , and the simple savoury sambal into an agreeable third flavour. Go for it, top it with duck wings or leg. Note the stubbornly short operation hours.

Back in the day, the old Boat Quay area was a hub of riverside tongkang boat activity and housed a collection of some fine Teochew hawkers. The famous Tai Hwa Bak Chor Mee was one of them. The other star hawker was this braised duck stall. Teochews will like it for its very old-school flavour. They still use an "old sauce" which is chilled and replenished each day to braise the ducks, gizzards, tofu, and eggs. It has a bold supreme dark soy aroma with faint hints of herbs. The duck is not too gamey, is soft enough but still has a nice bite and texture. You see his old customers ordering a whole duck for their lunch party. Drizzle a spoon of that sauce over the rice with a few slices of the duck over it, and you know why Teochew folks are so discerning in their foodways.
