Desmond is the younger sibling of the now defunct Sik Wai Sin founders and his brother runs Eat First (Sik Sin). They have pretty much continued where his retired folks left off. The miso or bean paste steamed carp head is literally on every diner's table. The bean paste is a special combination of a few other sauces and ingredients which gives it that moreish miso/prune-plus sensation over the fresh carp head laden with lard and scallions. The other comforting order is the steamed pork patty with salted fish, absolutely Cantonese and the ultimate partner with a bowl of rice. The prawn tofu in a thick and rich seafood sauce is an industry gold standard. Greens include a crunchy stir-fried fresh kailan and check out their daily double-boiled soups too.
