This “shell” style of curry puff with a faux pas filo pastry is unique to Singapore and these folks are believed to be the first to offer it in this little nation almost three decades back. They moved on to a larger coffeeshop operations but sold the business not long after, citing lack of manpower. But the family kept the "shell” curry puff tradition alive and now operates this little stall here. The second generation mans the stall and they open only on weekends as they all have weekday jobs. The buttery and crumbly pastry filled with moist curry potatoes with chicken and egg are still hand made ($1.50). What surprised us was the seasonal durian version ($1.80) – stuffed with own-made creamy and pulpy D24 durian flesh – rich and bold.

This stall became a chain business after they bought the old master and his little stall in Ang Mo Kio years ago. They have tweaked the recipe somewhat and now have a bolder and more savoury (not overly spicy) rempah base. The potatoes come just short of mushy with a wedge of egg and chicken chunks. The rempah spice does take centre stage upon the first bite and the pastry skin is just thick enough to hold it all in. They also offer a chicken rendang which is a little sweeter and an "impossible" vegetarian patty meat version.
