This is originally a street food snack for night owls and beer buddies. The wings are marinated with a complex recipe and it includes rose wine, maltose, soy sauce, limes, etc. It delivers a crispy and roasty skin with moist and juicy meat inside. They often use a special char-grill, where the skewered wings are hung up in rows and roasted of amber glow fire- slowly and beautifully. You have them with a tangy sharp garlicky chilli sauce.

They sell only chicken wings and they admitted they use supplier marinated chicken. But that's a common tale among hawkers. What got us was the way they paid attention to the grill – when is the fire right, how they skewer the wings onto the triple pronged iron skewer, how they diligently trim off excess and overburnt bits just so you get the most roast and juiciest part. Best to get them off the grill and piping hot. All the flavours of rose wine, sugar, soy sauce, etc. are in place and the garlic and lime chilli sauce are on point.
