Wang Lao Wu Chicken Rice
Blk 4A Jalan Batu #01-28, Jalan Batu Hawker Ctr (Map) 8am – 10pm Daily
It is amazing how these folks still offer chicken rice at $2; they bear in mind the poorer folks living around the area. This version is very old fashioned and heartland style in it's ways. You won't find fat gelatin oozing out of the chicken pieces and they use a lean fowl as the folks that eat this regularly would appreciate it. The chicken is soft and they specialise in the "roasted" (deep fried actually) version. The rice is not oily and has a pleasantly rich aroma of chicken stock. The chiili sauce come blended with ginger and they rightly use the thick caramel soy sauce. Their soup has touches of wolfberries and a faint, wistful flavours of herbs like dang gui- which lend a very pleasant sweetness to it.

This brand is another household name for chicken rice in Singapore. The late founder Mr Wee Toon Ouut passed on in 2019 but he had already passed on his skills to his son and head chefs years earlier. Their poached chicken chunks come with a nice layer of jellified fat that lends so much flavour and smoothness to the meat, and the blended soy sauce spooned over is just the icing on the cake. The rice is softly firm and done with the residual stock used to poach the dozens of chickens daily. Chilli is vintage style sharp, spicy and tangy and remember to drip some dark and thick soy sauce over the rice and dip the chicken in the ginger sauce too. They have a few outlets in the region too, including Japan, the Philippines and Indonesia.
