A mid age couple stares at a constant crowd that waits at least 15 mins for their food each lunch hour. Each batch is first pre-fried with a light fish sauce blend then finished in small batches (Cha kway teow should not be done in big batches). Add a couple of dollars of cockles onto your portion and you see why Singaporeans love this ugly looking plate of Cha kway teow. It comes smooth and soft enough, well wok fried and the medium rare slivers of cockles lend a slimy crunchy texture (connoisseurs only!) to the sweetish, savoury and fish sauce accented dish.
