Mr Ng junior Ah Kiat has taken over since his father passed on and it has been nearly a decade. Theirs was the char kway teow that made the late Anthony Bourdain quip “How can something so ugly be so good” upon his first mouthful. The black sweet and savoury sauce is the magic mojo and Mr Ng once told us “There’s more ingredients in there that meet the eye and the palate”. Who cares, especially not the patient crowd that lines up for a plate of these gorgeously sinful noodles. They top it with only Chinese sausage, chives and some hum or blood cockles with bean sprouts. The egg is splashed in the last minute, so it remains soft and moist when you chomp in. The sweet, savoury, and umami sensation is… addictive.
