He is the original disciple of the late legendary Mr Ng or Hill Street Fried Kway Teow, when he helped out as a kid back in the 70s at the famous now defunct Thong Chai Medical Hall street side hawkers. His version comes moist, despite all the frying time as he constantly adds water to maintain the roastiness and the moisture. The all-important sauce has lovely aroma of sweet caramel soy sauce with fish sauce and a secret umami layer. It is so moreish and addictive.
