Tonny is one of the most talented Cantonese chefs in Singapore. He hails from Hong Kong and has been based here over the last three decades opening a few concepts like Shunde Restaurant. His menu is out of the ordinary - from vegetables, seafood, meats, roast, grills, etc. Very few would miss his mount of Crispy Shredded Yam with Truffles sauce for starters. His Crouching Tiger Hidden Dragon of dry scallops with egg whites served over a crispy flour basket, is also a hit. Decadent items include lobsters and abalone and even an Iberico salad if you must, and there's also his rendition of humble ingredients- like a soy braised duck tongue, salted whitebait with soft braised cucumber. You will also like his crab porridge and steamed curry crab over glutinous rice. And yes, he does simple Cantonese steamed fishes too. Ask him for some off-menu creations and he may just boil some trotters in clear rich stock, chill it, and serve up a trotter’s jelly. You should try his lemon and wolf berry jelly dessert, such a breath of fresh air. But get this, the jelly is made with fish scales, an old Cantonese secret There's a lot of negative noise about his price rise over the years, but his fine ingredients and operation cost had never been the status quo all along.
