We often see their stalls with lines at pasar malam (night markets) and Ramadan Bazaars for good reason. They now operate at this permanent hawker stall – their prawn vadai draws them in because it has a very moreish and lovable texture and flavour. There is a crispiness amidst the gummy, fluffy doughnut goodness within, that makes you think of the second (even third) before you finish the first one. The softer-shelled grey prawns they use let you chomp right into the calcium it holds. It has a gentle seafood flavour but, you must eat it fresh to enjoy all that texture; a lot will be lost if you keep it beyond an hour. Green chillis are not cheap these days and they still provide them as a accompaniment- a very unique Singapore style of eating it. Go easy and reject it if you can’t handle biting into the raw chilli. Help minimise food waste.
