Millennial Joe began his career in fancier restaurants specialising in the grill station. He ditched that path and roosted here. His edge is the use of a Josper oven, an all-steel contraption that nestles a bed of Japanese style bincho-tan charcoal inside where all his smoky and juicy meats are rendered. The result, whether the usual popular chicken chop, kurobuta, angus or even wagyu beef, is served with a ton of respect for the fussy diners in the area. It takes time to charcoal-bake them well and Joe will have it no other way. He also oven roasts his greens that accompanies the meats, and he only uses the fryer for his moreish onion rings and fries. These new breed of young thinking hawkers are the face of the new class of street food hawkers in Singapore.
