We often see their stalls with lines at pasar malam (night markets) and Ramadan Bazaars for good reason. They now operate at this permanent hawker stall – their prawn vadai draws them in because it has a very moreish and lovable texture and flavour. There is a crispiness amidst the gummy, fluffy doughnut goodness within, that makes you think of the second (even third) before you finish the first one. The softer shelled grey prawns they use lets you chomp right into the calcium it holds. It has a gentle seafood flavour but, you must eat it fresh to enjoy all that texture; a lot will be lost if you keep it beyond an hour. Green chillis are not cheap these days and they still provide them as a accompaniment- a very unique Singapore style of eating it. Go easy and reject it if you can’t handle biting into the raw chilli. Help minimise food waste.
