Lucy supplements her full-time work income with this stunning prawn vadai (wadeh) that she makes only on Saturdays as she has a weekday job. It comes 90% fried then frozen. You merely fry it again for a minute or so. The delectably arresting crispiness outside contains a softly gummy dough inside, flavoured and specked with green chilli bits and curry leaves. The little soft-shelled grey prawns used lends so much flavour and trust us, one is not enough. She sells them in a pack of 12 and prices depend, and fairly so, on the price of the crustacean each week, ranging from $1.20 to about $1.40 each. Order ahead, self-collect or arrange for delivery, and enjoy this with black coffee sans sugar or tea! Note- her little home kitchen can only churn limited amounts each time.
