Mr Poon Chee Kin hails from a family that specialises in these turtle soups for decades. But his version comes a big notch less herbal as the herbal essence can sometimes overwhelm the basic stock and flavour inherent in it. It comes clear and very flavourful with hardly any herb but punctuated by a lovely little shot of brandy, his signature style. The regulars hone in here for the decadent order which comes with the collagenous skin, meat and egg (when available). Turtle soup is regarded as a vanishing food as not many are entering the hawker trade let alone offering turtle soup. This version is very good for entry level turtle soup foodies.

A younger generation is helming this name with over 50 years in the business, harking back to the pushcart era. These folks are traditionalists and are bold with their use of herbs, which many customers say it serves to invigorate and enliven the dull and the listless. The stock is a bolder sweeter version of good chicken stock but unfused with herbs. The turtle parts are very fresh and they have a range in their menu, from offals, gelatinous skin, meat, and eggs. It may sound like some fuddy-duddy boomer's meal, but they have a big group of Gen X and Millenials among their clientele.
