Turtle Soup

This softshell turtle (usually farm-bred terrapins) soup is a Teochew and Cantonese delicacy. It is cooked with herbs and comes with meat, gelatinous skin, offal and even eggs and fans have it with a bowl of steamed rice. It keeps the body nourished and warm, especially on a cold day. Because of sustainability reasons, a lot of supplies and suppliers are controlled and hawkers cannot order more than they like, which makes this soup a rare and fast fading delight.
