The feisty little old lady manning the wok and steamer (sometimes with a helper), churning out at least 15 dishes by 11am each day they open (give and take 30mins), is a phenomenon. The matriarch of this Seah family is already in her 80s and she hunches over the wok, single- handedly, to get some comfortingly simple dishes out. Her braised ter ka (trotters) is of correct doneness and the “fattier” version comes with skin, fat and collagen that lovingly collapses in the mouth. The minced pork, done with spicy black bean paste, is as right as rain for such a meal. The steamed fish is layered with salted vegetables and the braised bitter gourds are very popular. Her fried leeks are intentionally wok charred at some edges as the bittersweet umami sensation it delivers is so adorable with the porridge. Even the taupok is braised till soft and gives in to the soy stock and absorbs all that goodness. When she retires, no one will continue as her son who mans the counter does not cook.
