Teochew Kueh

Teochews like their kuehs (cakes) soft and savoury. The skin is usually made with steamed r yam, sweet potato or rice flour. Soon kueh, for instance, is filled with dried shrimps and shredded bamboo shoots or radish while png kueh is stuffed with glutinous rice, shallots and dried shrimps. Ku chye kueh is similar to soon kueh, except it is stuffed with garlic fried chives. Some cooks pan fry the cooled steamed cakes for a crispy texture outside
