This is not fancy nor social media photogenic stuff. But this master will singlehandedly (he lost a hand in an accident decades back) knead the dough, stretch and season them, then cut them into little long strips with old school methods – by hand with wood blocks. He fries them up then sweeten them with a sticky syrup of maltose sugar and spices. The resultant little cubes and blocks of crumbly soft dough cakes are so pleasant with a cup of Chinese tea, as they do back in the day. But hey, a sugarless cuppa kopi-o or long black will do the trick also. This One-Armed-Hawker-Hero is seemingly the last hawker making these old school snack in Singapore. You can catch him action, labouring each morning in his open little kitchen. It makes great images for your insta stories.
