They are sited here because their family used to run food carts along this street back in the bullock cart and food pushcart days of yore in Singapore. This created-in-Singapore dish, made with lamb shank bones with bits of meat and cartilage attached, is stewed in a spicy, tomato-based sauce spiked with masala. The lovable quirk here is you gnaw and nibble around (using your hands, with supplied gloves) it It comes reddish, stacked with bones and the aficionados love them. Their version has a tangy sweet, very spicy yet savoury and moreish feel to it. Mop it up with the bread slices and if you don’t know how, ask the servers how best to knock and slide those sinful slivers of marrow out. Or, just simply suck it out with a straw!
