This is not a fan ILY-designed hawker stall touting retro heritage. He just makes and sells Sat Kay Ma, a traditional Cantonese snack. This master will singlehandedly (he lost a hand in an accident decades back) knead the dough, stretch and season them, then cut them into little long strips with old school methods – by hand with wood blocks. He fries them up then sweeten them with a sticky syrup of maltose sugar and spices. The resultant little cubes and blocks of crumbly soft dough cakes are so pleasant with a cup of Chinese tea, as they were back in the day. But hey, a sugarless cuppa kopi-o or long black will do the trick also. This One-Armed-Hawker-Hero is seemingly the last hawker making these old- school snacks in Singapore. You can catch him in action, labouring each morning in his open little kitchen. It makes great images for your Instagram stories.
