They use an old and almost forgotten Indonesian recipe and took it a notch up. The rempah has more than the usual, including dashes of blue ginger and lemongrass and the chicken stock is uber rich. The magic is the touch of lightly salted vegetables they introduce to calm all the spiciness and yet not overwhelm the broth. It comes very rich and intensely flavourful. The portion includes a generous portion of shredded chicken and rice cakes with lightly blanched bean sprouts. Boss Sheila and partner Faridah (trivia: you may recognise her at Singapore's Talentime winner in 1983, the teenage sensation then) are ex-staff and associates of former late boss Sam. They simply took the game to higher grounds and their satay was voted best in Singapore by a Malay foodie club.

The soto ayam comes with generous chunks of torn chicken pieces and will fill you up, what with the huge blocks of soft lontong or rice cakes and greens. The magic is not just the rempah they swirl into the intense chicken stock or that wistful hint of blue ginger. It's the spoon of coconut milk released in to thicken the broth just a bit and bind the rempah in so nicely. The soup looks and feels thick and rich, but one tip here – go a little after the stall opens and let the broth simmer before you patiently line up for your fill.
