Silly you if you thought all hawker fare are unhealthy. Xiao Ma hails from China, made Singapore his home and now is a Permanent Resident. He learned and toiled in Japanese kitchens for a few years under fussy chefs and then turned the art of steaming a perfect fish into a menu at this hawker stall. It does not look like much, but when he offers up a whole perfectly steamed garoupa (he personally checks its doneness with the Japanese chopstick method), golden pomfret or a fresh sea bass (kim bak lor), the crowd gathers. They are all gloriously fresh and moist. It comes doused with a light soy miso blended sauce, with a bowl of chawanmushi (steamed egg custard), and fluffy rice (he used to offer a slice of fruit but not anymore). So Asian in style, so healthy and totally hawker in its ways. And the price tag of between $5 and $7 per set, is a mystery to us – it is as if he is doing community work at that price.
