This stall is run by the folks behind HK Chun Kee and it is led by their bbq and seafood specialist here. They specialise in this dish and the art here is how they grill the skate or stingray over a banana leaf on the griddle to trap the aroma. When almost done, some water is splashed beside it and covered to steam bake for a moist finish before sambal is laid over. The resultant moist, soft and flaky fresh skate is also topped with pickled and spicy sweet onions. Remember to squeeze the lime over before you devour. These things go so well with a cold beer or a glass of iced sugar cane.
