Social enterprise maverick Koh Seng Choon created the Dignity Kitchen concept in 2011 and never looked back. He began “naively” then, and today he runs this huge social enterprise food court on Boon Keng Road and operates 8 halal stalls, all run by disadvantaged to disabled folks, and has facilities for training. Their laksa (and the menu at large) was created with the help of professional chefs. The laksa gravy is rich and thick and they use poached chicken instead of cockles, with fish cakes, taupok, egg, and bean sprouts with daun kesom leaves. Blend the sambal (served separately) in, and the dish transforms. The recipe has come a long way since day one. The wanton mee (using chicken cha siew), has a very “QQ” or softly resilient noodle with a Hong Kong-style sauce- soy, sesame oil, and oyster sauce. You add sambal separately. They also offer claypot rice, rojak, and chicken rice (a rare and vanishing version served with spicy pickled achar). You order drinks from the hearing impaired and they have fun “how-to-order” poster instructions for you, or you can just point to the menu photo. They have professional chefs in the back kitchen backing up to maintain quality and they also have a bakery section offering muffins, pandan cakes, gula melaka cakes etc.
