In this manpower shortage situation (especially in the F&B industry), it is amazing that these older hawkers (an old couple) still find time and elbow grease energy to manually skew these sticks of fresh meat, seafood and vegetable. They are cooked in a hot pot and then dunked in their own-made satay sauce which has a nutty, spicy and very savoury sensation. You can order a set or choose from pork, chicken, shrimps, meat, fish cakes, vegetables, tofu, shellfish, etc. (better to order a combo set from them!) The heat in the satay sauce is not scary and has a Teochew element with wistful hints of tee po (dried and smoked sole fish bones) in the recipe. It sits more on the savoury and gently sweet side of spicy. You need time to enjoy this; cook them thoroughly and slowly savour. Also, to load up, order a platter of their blanch beehoon with bean sprouts, and then pour the satay sauce over.. to sort of like a DIY satay beehoon.
