Sambal Stingray. It has a moist soft chewy texture, and a load of flavour. And the sambal , that's the star of the show. Spicy, fragrant, with onions and belacan – every stall has its own secret recipe. Some like it fiery hot, some like it a bit sweeter. The stingray is grilled just right, not too dry, and still juicy and tender. Then, they slather it with that fragrant sambal, and serve it with some calamansi lime. Squeeze a bit of lime over it, and dig in.
