It’s rare to find a Muslim offering this Hokkien Chinese dish. But Mohamed Asri bin Ramli faithfully renders his mother-in-law's Chinese recipe and it gets as good as they come. The roasted prawn shell and shallot stock lend a coherent flavour and aroma which sits comfortably with the softly blanched yellow noodles. It comes topped with prawns (of course) and clams that also lend an added layer of sweetness to the broth. If you like and when it’s available, order the social media picture-friendly version topped with lobster or crayfish, then shoot quickly and eat away!
