Chef Pang went from refined French pastry, café and bistro offerings and then back to his roots – Hakka cuisine. He went from poulet to nam yue kai (fried fermented red tofu chicken wings, and one of the best we've had with a subtle nam yu flavour and a superb batter) which he now serves with this Hakka noodles, -softly al dente with a bold umami sauce punched up with a minced meat and lard sauce, the way they used to do it back in the day. He runs a tight and efficient kitchen with well-trained cooks in this little stall and an order comes with the springy and loose noodles topped with that minced meat lard sauce (looking plain but not tasting so), a bowl of yong tau foo (vegetables and tubers stuffed with minced pork paste). We suggest you complete the act with an extra order of the nam yue chicken wings (seperate order). Update : Pang’s Hakka Noodle has relocated to a new location in March 2023.
