Auntie Pat, with all the traditions of a true-blue Eurasian, does her sugee cake with a strict discipline in approach. This version is as authentic as it gets, with all those butters and even spoons of brandy inside. The amount of hand chopped almonds in the cake is abundant and you feel that load of nuttiness in every bite. The butteriness shines through and the texture is soft enough but not overly so. Best to eat her version fresh off her kitchen. It’s softly, sinfully good and very nutty yet not overly sweet. But it was still as good when we kept it for 3 days in the fridge.

She was an ex-main staff baker in Dona Manis and left after a long stint to set up a competing outlet right next door. Her signature banana pie is very similar to Dona Manis, buttery soft crust, dense with bananas inside but her crust toppings use grated coconut instead of peanuts like her former boss's. The banana cake is more flavourful but it's gummy and dense and some like this style.
