One of the few rare hawker stalls that specialise in this awkwardly addictive salad these days as most hawkers want to offer variety in their stalls. They use a top-grade sweet shrimp paste from Penang and blend it with a perfect mix of sugar, chilli and tamarind. Wildly addictive. You’ll notice theirs come a tad drier looking, as they do not press on the fruits, tubers and vegetables (pineapples, puff tofu, turnips, bean sprouts etc.) when they toss the salad with the sauce. It just coats the salad and none of the vegetable juices escape into the mix to tarnish the intended flavour. The wait here is sometimes excruciating, and you take a number, but we’ve never heard a lot of complaints about it.
