They are protectors of this culinary faith. The mee goreng comes classic dry and the flavouring takes in the taste of the alkali in the yellow noodles. Again, the redness comes from the colour of the spice paste which has light tones of spiciness, bold savoury touches, and livened with tomato paste. The green chili bits, cucumber, canned peas, and potato cubes are classic toppings.

They too once hailed from the legendary Indian Muslim hawkers that ruled a street in old Shenton Way, famous for Singapore Indian Muslim hawker fare like Mee Goreng, Nasi Goreng etc. Theirs come rightly drier but intense with bold savoury flavours that harmonises so well with the alkali (or kee) in the yellow noodles turned red because of the colour in the seasoning sauce. You won't need much else. Those little peas do nothing much to the old era "Mee Goreng" sensation. If you are a fan, you know you need to have this fix once in a while.
