The key action here is the prawn noodle soup version. The stock is made with roasted and ground shrimp heads with a balanced infusion of pork bones plus a host of other ingredients and it comes rich, opaque and redolent with a distinct prawn flavour calmed by bone stock. The yellow noodles, if you order this variety, lends another layer of umami to the show. Our favourite is the yellow mee and kway teow (or beehoon) combo. The shrimps are large but halved (really old-school style) and very fresh, and those bits of lard they top over with is magic to the equation. You can add pork ribs and intestine but sprinkle the chilli or "gunpowder" powder over at your own risk. This 50-plus-year-old brand is now helmed by Watson, a second generation and a millennial.
