The name in Chinese means "quickly and in abundance"and you can see the abundant queue for their kway chap each day. It appeals largely to palates that can't handle too much herbs and spices in the all important soy braise used to cook the offals, eggs, tofu, fish cakes, belly pork and gelatinous pig skin. It is light, with only wistful hints of herbs (nary there) and the offals and ingredients are braised till they are crunchy, spingy soft- and devoid of any pong as they cleanse them very well. It goes so well with the robust ginger and vinegar chilli dip. They offer a softly braised (in the same soy concoction) pig trotters and it comes with layers of soft gelatinous skin and fat, with moist soft meat- the way hard core fans like it.
