Linda Heng used to run the uber popular Dajie wanton mee at Jalan Besar before she hung up her apron and walked into the retirement sunset. But the kitchen always beckoned, so now she cooks up bottles of kaya in her home for sale. Her pandan laced (she squeezes the juice from the leaves for colour and aroma) is the traditional home style rendition. It comes more like a paste, is rich and thick and it spreads beautifully on a slice of toast. No preservatives or custard powder is added and it's feels very- home made. Commercial ones are often smooth and creamy. Put a slice of salted butter over the kaya toast and it's a slice of Singapore's national breakfast bread.
