Pasta is the staple food of traditional Italian cuisine; it has slowly crept upon our sunny shores and influenced many dishes. It is now very commonly found in hawker centres as another form of noodles. They now offer not just the traditional aglio olio and carbonara versions but even black squid ink, salted egg yolk, chilli crab and even sambal seafood renditions. What used to be a restaurant only dish can now be commonly and affordably found at hawker centres.

Chef Choo is a lone hawker in this little pasta hawker kitchen. His wife helps out front-of- house for orders and service. There is a certain pride in his ways and when asked, he replied “I sell only spaghetti.” It makes sense, as he has a way of searing and flaming them to deliver that al dente and flavourful plate of pasta. He concentrates on his sauces, from carbonara, aglio olio to wine and tomatoes. Top them with your favourite seafood and when his specials are available, like fresh air flown scallops or blue mussels, order it. We had no regrets doing so. His classic tomato seafood pasta comes sizzling on a iron pan. it is one of our favourites there. It later dawned on us that the comforting old school allure of his pastas reminded us of the moreish pasta plates we once had in that old school Italian joint Pete’s Place, where Chef Choo spent a great few years refining his skills.
