She worked for the famous oyster omelette master at Newton (who hailed from the legendary Orchard Road carpark hawkers). Almost thirty years on, she took 9ver from her retired bosses and now helms the stall here. Hers is the very crispy edge style, but has soft starchy mochi-like little chunks within. It comes with huge juicy oysters fried with a thin coat of potato starch. The spring onions and coriander gives it a nice garden green touch. Chilli sauce is sharp and spicy but is the common store-bought variety.
