Shinji Matusdaira san and his wife Ayana took over this stall once operated by their favourite Thai hawker, Mdm Orawan. In the spirit of good heartedness, they kept her on as an employee and now they also feature some Thai dishes with their own made gluten free soba (his recipe made in the stall back kitchen by Mdm Orawan and team) using buckwheat flour from Japan. It comes soft and smooth with seaweed, sesame seeds and topped with either chicken or pork. The sharp dip sauce is a bold and uses good grade soy sauce with bone stock and hints of mirin and spicy elements, catered uniquely to the Singapore palate. It is best to eat the soba immediately, all slurpy and soft, as the weather here tends to dry and firm up the noodles if you let it sit for over 10 minutes. Of course, you will find tom yum soup and mango salad in the menu, all Shinji san's favourite.
