All the regulars know to go not a minute earlier than 9am. A long queue magically forms. The cooks work at Flash speed but it's still a 30 min wait as most dapau(takeout) numerous packs. The rice lights up in the mouth on first bite- moist softly firm basmati grains with just enough coconut milk with light hints of pandan and lemongrass. It's the best we've had thus far. The chicken wings and larger ikan selar fish is done batch by batch- you patiently wait for the crispy goodness. The sambal is sweetish, spicy with hints of tamarind and is divine with the rice and the crispy Ikan bilis. _______________________________________________________________________________________

The all-important rice here is richer than most. The coconut milk intensity is bold and blended with a pinch of salt, and when cooked with the sweetish rice, it is magic. The sambal comes spicy of course but calmed by palm sugar which will give you a delayed wow- fire moment in the mouth. They fry their popular toppings, chicken wings, almost nonstop all day and if you get them fresh and hot, it has a addictively crispy, not just crunchy, sensation as the balance of rice flour used makes it so moreish. The meat inside comes moist. Of course, top it with fried egg, crispy ikan bilis (anchovies) and peanuts to complete the show.
